This is an Autumn post and you will find out why I said that.

This recipe is another made up one and it is half my idea and half my sister’s. It took a lot of thinking and this is what I came up with. Well, me and my sister. I thought, I want it to have some fruit in. Apple or banana? I thought what goes with banana and I couldn’t think of anything so then I thought of apple and what goes with apple. Toffee! Like toffee apples that are quite Halloween like, and it is coming up to Halloween. But then you can’t really just get some toffee and stick apples on top – you have to have a biscuit base, said my sister. And then you can crumble some biscuits on top.


We asked mum if we could do it that very moment and she said no but we did it anyway. But, disaster struck! We didn’t have any apples, and we couldn’t be bothered to get any from Tesco’s or the village shop so we went down to our orchard which is quite small but has loads of different types of apples (cooking apples, really bitter apples, really sweet apples). We didn’t know which tree to get the apples from so we went for the one we could actually reach. That tree was a really bitter tree but we didn’t notice that so we got some anyway. At the time we got the apples it was raining so when we took the pictures it got a nice effect.


We brought them back inside and started to peel them and cut them into thin slices and then put them into a small bowl which had some lemon juice in to stop the apples going brown. Then we weighed some stuff which I really can’t be asked to tell you about because it is BORING!


So then we dumped all the ingredients together into the bowl which we didn’t know was wrong and we were supposed to not put the flour in first – you were supposed to put the butter and sugar in first. Mowgli our cat looked at the sugar and he thought it was loads of mice.


So mum said our cookies would taste a bit floury which they did so don’t ever, unless you want to, put flour in first. Then we made some sticky and very hot toffee sauce. I know that because a bit of toffee fell on my foot and it hurt and it was very hot. Then we put our apples into the hot sauce and it splashed everywhere. Then I went to play on google maps while we waited for it to bring to the boil.


We then made five smallish cookies from our cookie dough that we made. Then we popped the cookies in the oven and went to watch something. We only got to watch something for ten minutes because the buzzer went and my sister and my Mum had to take the cookies out of the oven to cool. Then I really wanted to go to Greendale farm shop for some nuts with my dad and my sister. But they didn’t have any so we went back home and our Apploffee had magically fixed itself together with some Mum power. Then we put our Apploffee into the oven for 20 minutes.

Hey presto! Our Apploffe was ready to eat! Yay! But while we were at Greendale we got some Vienetta (which is a type of ice cream) and we put them together and ate our Apploffee. There Done! YUM!!!!!!!


Cookie base
6 oz soft butter
4 oz castor sugar
1 egg
7 oz plain flour
1/4 tsp salt
1 tsp vanilla extract

Toffee apples
4 to 5 apples
2 tbsp lemon juice
100 ml water
8 oz castor sugar
30 ml golden syrup
1 oz butter

Preheat the oven to 180 degrees C.

Make the cookie base and crumbs :-

Cream the butter and sugar together in a large mixing bowl.

Add the egg and mix well.

Stir in the flour, salt and vanilla extract.

Use the 5 tablespoonfuls of the dough to make 5 cookies (place balls on a cookie tray and bake in the oven for 10 minutes until done, then cool on a wire rack).

Use the rest of the cookie dough to line a rectangular pyrex dish. Put this in the fridge to chill while you make the toffee apples.

Make the toffee apples:-

Peel, core and dice the apples. Toss them in the lemon juice and set aside.

Put the water and sugar into a saucepan and slowly bring to the boil.

Reduce the heat and add the syrup and butter. Stir constantly and bring to the boil again.

Turn the heat down. Add the apples and cook, stirring gently, until just soft.

Take the cookie base dish out of the fridge. Pour the toffee apples on top of the cookie base and bake in the oven for 20 minutes.

Crumble the baked cookies on top of the Apploffee before serving.
